Sodium cyclamate is a white crystalline powder, odorless, with a sweetness 40 to 50 times that of sucrose. It is soluble in water (1g/5mL), slightly soluble in propylene glycol (1g/25mL), and insoluble in ethanol, chloroform, benzene and diethyl ether. The pH value of a 10% aqueous solution is 6.5. It is not hygroscopic, alkali-resistant, heat-resistant (decomposition temperature 28°C), and light-resistant. The oral LD50 of mice is 18000mg/kg, and the ADI is 0-11mg/kg (FAO/WHO, 1994).

Sodium cyclamate is a relatively commonly used non-nutritive artificially synthesized sweetener. It is not absorbed in the human body, does not produce heat, and does not cause tooth decay. The taste is close to sucrose. It is often mixed with saccharin sodium (10:1) to cover the bitterness of saccharin sodium. It can be used in dried tangerine peel, preserved plums, dried bayberries, and preserved plums with a maximum usage of 8.0g/kg; in preserves with a maximum usage of 1.0g/kg; in pickled vegetables, seasoning sauces, formulated wines, beverages, popsicles, ice creams, ice cream cones, pastries, biscuits, and bread with a maximum usage of 0.65g/kg.
