Fumaric Acid is colorless needle-like or leaf-like crystals with a sour taste of fruit. Slightly soluble in water, ether and acetic acid, soluble in ethanol. Almost insoluble in chloroform.

Used in the manufacture of unsaturated polyester resins, pesticides and amino acids.
As an acidulant, mostly used in combination with citric acid. Can be used for raw wet products and fruit drinks.
