Sarcosine is light brown powder with a slightly pinkish tint. It has a pungent and astringent taste. As a commodity, there is also a water solution prepared and preserved with sulfur dioxide. The surface tension of a 0.1% solution is 3.58 Pa (pH 3.0-7.0) or 3.82 Pa (pH 9.0). It has strong heat resistance. When heated in an aqueous solution with pH 3-7, it will not change color or undergo changes. It has strong foaming properties and can form fine and lasting foam. It is soluble in water, ethanol and dilute ethanol, and insoluble in propylene glycol and oils. The pH value of a 1% aqueous solution is 4.5-5.5.
