Sodium dihydrogen pyrophosphate appears as white monoclinic crystalline powder or molten solid. The relative density is 1.86. It is soluble in water and insoluble in ethanol. When the aqueous solution is heated with dilute inorganic acid, it hydrolyzes into phosphoric acid. Acidic sodium pyrophosphate is slightly hygroscopic and forms a hexahydrate after absorbing water. When heated above 220ºC, it decomposes to form sodium metaphosphate. When used as a leavening agent, it may contain an appropriate amount of aluminum salt and/or calcium salt to control the reaction rate.
