Aspartame is White crystalline powder, odorless, with strong sweetness and pure taste. The sweetness is 100 to 200 times that of sucrose. Melting point 235°C (decomposition). It has the general properties of amino acids. Stable under dry conditions or in the pH range of 2 to 5. In strongly acidic aqueous solutions, it can hydrolyze to produce monomeric amino acids. Under neutral or alkaline conditions, it can cyclize to diketopiperazine. The solubility in water (at 25°C) is related to the pH value. At pH 7.0, it is 10.2%, and at pH 3.72, it is 18.2%. The isoelectric point at 25°C is pH 5.2. The oral LD50 for mice is >10g/kg, and the ADI is 0-40mg/kg (FAO/WHO, 1994).
