2,3-Pentanedione is a yellow-green oily liquid. It has a sweet buttermilk, cream, and caramel aroma with a nutty undertone. It has a slightly sweet odor of quinone. When diluted, it has a cream odor. It is slightly soluble in water and soluble in organic solvents such as ethanol. It is prone to dimerization and can undergo oxidation, reduction, addition, and condensation reactions. It can be decomposed by potassium permanganate and reacts with sodium hydroxide to convert into α-hydroxy acid.
